Egg, Eggs - Taste Of Sundress album

Sometimes soft boiled eggs are eaten in the shell, stood upright in little egg cups. You can then daintily tap the top of the egg with a spoon and scoop out the insides. They’re great on toast, sprinkled with salt, pepper, and hot sauce. Drop eggs into a pan over medium-high heat, along with one, thin pat of butter for each egg. Then start stirring with a spatula. Break the yolks, let them mix with the butter and whites.
8 eggs, 1 teaspoon salt, 3 cups water, 1 tablespoon soy sauce, 1 tablespoon black soy sauce, 1/4 teaspoon salt, 2 tablespoons black tea leaves, 2 pods star anise, 1 (2 inch) piece cinnamon stick, 1 tablespoon tangerine zest. In a large saucepan, combine eggs and 1 teaspoon salt; cover with cold water. Bring to a boil, reduce heat, and simmer for 20 minutes. Remove from heat, drain, and cool. When cool, tap eggs with the back of a spoon to crack shells (do not remove shells)

The chicken egg taste is so classic and ingrained that it's hard for that not to be the standard to which other eggs are compared. I do like the gelatinous feel of an ostrich egg for novelty. However, I suppose I grew up on the classic, so from a taste perspective, I like the chicken better, but that doesn't mean I'd want to exclude that novelty. I like ostrich eggs and I'd like to have them on occasion.
